Guilt-Free Pasta Alfredo

One of my favorite dishes has to be pasta alfredo.The problem is that is packs tons of calories and fat into one meal. There's gotta be another way to enjoy the great taste and texture of pasta alfredo, without all of the BAD STUFF...WELL, THERE is .This guilt-free pasta alfredo is a great dish that gives you the best of both worlds.


This recipe serves 2
SO a serving size is 2 Cups..Cooked.
A little larger w/chicken or shrimp.

Ingredients:
4 cups (cooked) pasta
1 TBSP minced garlic
¾ cup 1 or 2% milk
1 TBSP flour or cornstarch
½ cup grated Parmesan cheese
sea salt/black pepper (to taste)
2 TBSP olive oil

In a large saute pan, over high heat, add olive oil and garlic.  Stir for 10 seconds, and add pasta, stir well.  In a small container with tight lid add ¼ cup milk and flour/cornstarch and shake vigorously.  Slowly drizzle into pan, while stirring.  Stir pasta, slowly adding the remainder of the milk, being sure that it is thoroughly-coated with the sauce.  Reduce heat to med-low and check to see that the consistency of the sauce is how YOU like it. Add more milk, if necessary. Remove from heat, and fold-in almost all of the Parmesan cheese.  This should bind the sauce, nicely to the pasta.  Garnish with remaining grated Parmesan cheese.
